Cookies, Cookies, and more Cookies...

         Hello everyone, I hope you had a good Holiday.  Christmas was a fun, exciting, and hectic day. I was so busy cooking Cakes, pies, Cornish hens, seafood salad, and of course, cookies for Santa.  I made peanut butter cookies, Chocolate chip peanut butter cookies, and  chocolate chip oatmeal raisin cookies, and I would like to share the recipe with you guys.

      Peanut butter cookies:

      You will need:        

       1 cup Creamy or Chunky Peanut Butter,
       1 cup firmly packed brown sugar
       1 large egg
       Granulated sugar

           First preheat oven to 350 Degrees.  Combine Peanut butter, brown sugar, and egg in a medium bowl until well blended.  roll heaping tbsp full into 1 1/2 inch balls. Place balls about 2 inches apart on ungreased baking sheet.  Dip table fork into granulated sugar.  Place sugar coated fork in crisscross fashion onto each ball, flattening to 1/2 inch thickness.  Repeat dipping fork into sugar to prevent it from sticking to dough.  Bake cookies in middle of oven for about 12 minutes, and let stand on cookie sheet for 2 minutes. Remove cookies with spatula to wire rack.  Let cool completely.  Store cookies in airtight container for up to1 week. (For chocolate chip peanut butter cookies, add chocolate chips to taste)

        Chocolate Chip Oatmeal Raisin Cookies:

        You will Need:
        3/4 cup all purpose flour,
        3/4 tsp salt,
        1/2 tsp baking soda and ground cinnamon,
        3/4 cup softened butter,
        3/4 cup each granulated sugar, and firmly packed brown sugar,
        1 large egg
        3 tsp vanilla (divided)
        3 cups uncooked old fashioned oats,
        1 cup raisins,
        1/2 cup confectioner sugar,
        1 tbsp milk,

           Preheat oven to 375 deg. F. Lightly grese baking sheet and set aside.  Combine flour, salt, baking soda, and ground cinnamon in small bowl.  Beat butter, granulated sugar and brown sugar in a large bowl with electric mixer on medium speed until light and fluffy.  Add egg and 2 tsp of vanilla , beat until well blended.  Add flour mixture just until dry ingredients are moist.  Stir in oats and raisins.  Drop tbsp full of dough 2 inches apart onto prepared baking sheet.  Bake about 10 minutes or until edges of cookies are a light golden brown.  Let cookies stand about 2 minutes on baking sheet.  Transfer to wire rack to cool completely.  To prepare glaze, stir together confectioner sugar, milk, and remaining vanilla in a small bowl until smooth.  Drizzle glaze over cookies with a fork or spoon. Allow glaze to set, and store cookies between wax paper in a tightly sealed container.  Eat and Feed your Soul!           " If food feeds the soul, I must have one happy soul :)"
