Brownies Anyone?

              If you don't already know, I love love, love chocolate. Lock me in a room full of chocolate and I bet it's gonna take 50 people to get me out :) Anyway I made my out of this world Brownies, and I would like to share the recipe with you all.
This Is what you'll Need:

1 1/2 Sticks butter(melted)
1 1/2 Cups sugar
3 Eggs
3/4 Cup All-purpose Flour
1 1/2 Teaspoons Vanilla Extract
1/2 Cup Baking Cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecans
1 cup chocolate chips
1 cup Coconut flakes
1 Jar maraschino cherries

Preheat oven to 350 degrees. Grease a 9-inch square baking pan. Combine butter, sugar, vanilla and eggs mix well. Combine flour, salt, baking powder, baking cocoa, gradually add to egg mixture, beat until well blended. Fold in Chocolate chips, Coconut flakes and pecans. Spread batter evenly into prepared pan. Place cherries on top of batter.  bake for 40 to 45 minutes or until brownies begin to pull away from sides of pan. Cool Completely and cut into bar.   Eat And Feed your soul!

Oh So Yummy Meatballs!

                                  Today I made my oh so yummy meatballs.  These meatballs are juicy and flavorful.  They're sure to be a big hit with the family.  You can serve them with spaghetti, or make a sub.  Try them, you'll like them.

  This is what you'll need:

1 lb ground beef
1 lb ground turkey
1 small white onion (diced)
1 green pepper (diced)
1/2 cup chopped green onions
1/2 cup chopped parsley
1 cup finely shredded parmesan cheese
1 1/2 cup bread crumbs
2 eggs
2 garlic cloves (finely chopped)
Salt and pepper
Olive oil


       Preheat oven to 350 degrees.  In a large bowl, add ground beef and ground turkey.  Add onions, parsley, green pepper, garlic, cheese, bread crumbs, green onions, and 2 eggs.  Using hands, mix well, without over working the meat, or the meatballs will come out tough and dry.  Season with salt and pepper.  Take meat and form into balls as large or as little as you like.  Lightly coat baking dish with olive oil.  Place meatballs on sheet about 2" apart.  Drizzle top of meatballs with olive oil.  Place into oven and cook for 40 minutes.  Flip meatballs over after 20 minutes.  Place in a large pot, with pasta sauce of your choice, and let simmer for 30 to 45 minutes. Move to a large serving bowl and top with some shredded parmesan cheese. Eat And Feed Your soul!

Deep Fried Bananas

                  Making Fried Bananas are so easy.  All you need is a deep pot or a deep fryer, cooking oil, 1 cup of pancake mix and 6 firm bananas.  I used the same pancake recipe I used for my Chocolate chip pancakes.

In the deep pot or deep fryer, preheat oil to 350 degrees. Cut bananas lengthwise. Dip bananas into pancake batter. Fry bananas, Turn bananas once after 2 minutes and continue to fry for 3 more minute until golden brown. Drain on paper towel. Top with some powdered sugar or serve with some ice cream.  Eat And Feed your soul!

Blueberry Cherry upside-Down Cake!

                         I love making cakes, pies, cookies, etc., almost anything that makes my kids and husband smile. Today I made Blueberry Cherry Upside-Down Cake.  What I really like about this cake is that it was moist and wasn't super sweet like a lot of other cakes.  It was also something that I felt good about giving to my kids, because of the fresh fruit, and little sugar.  So I'd like to share the recipe with all of you.


This is what you'll need:
  2 TBSP butter
  1 Cup firmly packed light brown sugar
  2 Cups fresh or frozen (thawed, rinsed, drained) blueberries
  1/2 cup pitted cherries or Maraschino Cherries
  3 egg yolks beaten 
  3 egg whites
  5 TBSP milk
  1 cup sifted all purpose flour
  1 TSP baking powder
  1/2 TSP salt
  Whipped cream (optional)
  Powdered sugar (optional)


          Preheat oven to 350 degrees.  Melt butter in a 9x9x2" baking pan.  Add Blueberries and cherries to bottom of pan.  Beat egg yolks and stir in brown sugar.  Beat in milk, flour, baking powder, and salt.  In a separate bowl, beat egg whites until stiff.  Fold egg whites into batter.  Pour batter into pan over blueberries and cherries. Place in oven for 45 minutes.  Take out of oven and loosen the edges. Turn out onto serving platter.  Sprinkle with powdered sugar. Serve with whipped Cream.  Eat And Be Happy:)

Pizza Night

                          Tonight was pizza night. My family are big pizza eaters.  If you have a pizza, watch out, they are coming for you : ) just kidding.  But we do love our pizza.  I set up  a pizza bar with different toppings like mozzarella, feta, pepperoni, etc..  Out of the different pizzas that were made tonight, my white pizza (pizza without sauce) I made for my Hubby stood out the most, so I'd like to share it with all of you.

                       

   You will need:

   1 onion diced
   1/2 green pepper, diced or sliced to taste
   Fresh parsley
   Fresh Mozzarella
   Bag of Italian blend shredded cheese
   Frozen spinach (thawed and drained
   Pre-made pizza dough
   Feta cheese
   1 Garlic clove diced
   Garlic/ Chili infused Extra Virgin Olive Oil

             Preheat oven to 350 Degrees F.  Lightly coat frying pan with olive oil.  Add garlic, onion, and green pepper.  Saute until 5 to 10 minutes or until tender.  Remove from heat.  Place pre-made pizza dough onto cookie sheet or pizza pan.  add onions, green peppers, garlic, spinach, cheeses, and top with parsley. Place in oven. For pre cooked pizza dough, 5 minutes, and for raw pizza dough, 30 to 45 minutes.  Remove from oven.  Sprinkle with feta cheese, and drizzle with olive oil.  Eat And Be Happy:)

Simple Fried Chicken with honey!

                             Tonight I made fried chicken drizzled in honey.

  This is what you'll need:
12 Whole Chicken wings or drumsticks
2  Cup all-purpose flour
2  Eggs
   Old bay
   Soul Seasoning
   Lemon pepper
   Vegetable oil for frying
   Honey for drizzling

Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil. In a bowl beat the eggs. Season chicken with soul seasoning, lemon pepper, and old bay. Dip the seasoned chicken in the egg and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken until golden brown and crisp, drain on paper towels.  Drizzle with honey.                   Eat And Be Happy : )

Pancakes Oh Chocolate chip Pancakes!!!

              Good morning everyone. So about 7am my kids and the big kid (my Husband) started jumping on my bed telling me to wake up and make them some pancakes. Me being half sleep says okay, not only did they have the ingredients out for Chocolate chip pancakes, but my daughter had her apron on ready to help me. And after the pancakes were made and devoured,  my son had chocolate all over his face trying to give me chocolate kisses : )


This what you'll need:

2 cups all-purpose flour
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil
1 cup semi-sweet or milk chocolate chips
1tsp of vanilla
1 tbsp cinnamon

In a large bowl, combine the flour, cinnamon, sugar, salt and baking powder. In a medium bowl mix  milk, eggs, vanilla and oil, add to dry ingredients and mix well. Stir in chocolate chips. Pour the batter by 1/2 cupfuls onto a lightly greased hot pan or griddle. Turn when bubbles form on top about 3 to 5 minutes cook until second side is golden brown.

Sweet Potato Casserole

         This is my recipe for Sweet Potato Casserole, when we have a big dinner, a must have is sweet potatoes,but we always make them the same way over and over again. So one day I decided to try something new, and came up with a new recipe that was a big hit with my family. I still remember the looks on the faces of my husband and children, as if they had bitten into something heavenly.
This is what you'll need:

4 (29oz) cans of cut sweet potatoes
1 Cup of raisins
3/4 Cup of brown sugar
3/4 cup of sugar
1/2 all-purpose flour
1/4 cup of butter

Preheat oven to 350 Degrees. Open and drain the cans of sweet potatoes. In a large bowl, add the sweet potatoes, 1/2 cup sugar, 1/2 cup brown sugar, and smash and mix until a texture of your liking. Add raisins, and move to oven safe casserole dish. In a small bowl, combine 1/4 cup sugar, 1/4 cup brown sugar, flour, and butter. Use fingers to mix until crumbly. Sprinkle crumb mixture over sweet potatoes. Bake for 30 minutes or until top is golden brown. Eat And Be Happy : )

Mashed Potatoes

Here Is my Mashed Potatoes Recipe, try it you'll like it : )

This is what you need:
5 pounds bag of white potatoes
1 cup of butter
1 cup of milk  
1/2 cup of heavy Cream
And salt and pepper to taste.

Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain and return to stove over low heat. Add butter, Milk, heavy cream, salt, and pepper. Use a potato masher to mash until smooth. Eat And Be Happy!
