Mini Cocolate Coconut Cake Surprise

            As you all know I love coming up with new recipes, especially ones that I feel will surprise my Husband and kids.  Today while messing around with a few ingredients, I came up with a deliciously light and fluffy coconut chocolate cake with a surprise, LEMON JUICE!    The lemon juice is what helped make this cake light and fluffy, and taste out of this world.  Give it a try and tel me what you think.  So without further adieu, here is the recipe
 Ingredients:
 1 cup all purpose flour
1/2 baking cocoa powder
3/4 cup granulated sugar
Brown Sugar
2 large eggs
1 tsp baking powder
1 tsp baking soda
1 8 oz. pack cream cheese
1 tsp vanilla extract
3/4 cup lemon juice
1/2 cup milk chocolate chips
1 tbsp vegetable oil
coconut flakes
 Directions:
             Preheat oven to 350 degrees.  In a large bowl, cream together cream cheese,  eggs, vanilla, lemon juice, and oil.  in a separate bowl, combine flour, baking soda, baking powder, cocoa powder, and granulated sugar.  Combine dry mixture slowly into wet mixture until batter is light and fluffy. Add Chocolate chips.  If batter seems thick, add more lemon juice.  Spray ramekins with cooking spray.  Sprinkle 1 Tbsp brown sugar and coconut flakes into bottom of each ramekin.  Fill ramekins with batter, leaving room for it to rise.  Sprinkle tops with more coconut flakes. Place in preheated oven for 25-30 minutes.  This recipe make about 10 or 12 servings using 4.5 oz. ramekins.

Spaghetti Aglio e Olio

            Today I would like to share with you this Italian favorite, Spaghetti Aglio e Olio.  It was a big hit with my family.


Ingredients:
1 Lb Spaghetti noodles
1/2 cup Extra Virgin Olive Oil
6 cloves Garlic Thinly sliced
2 Tbsp Crushed red pepper
1/2 cup fresh Parsley chopped
1 cup Shredded Parmesan cheese

Directions:
            Cook Pasta in Boiling water until al dente.  While pasta is boiling, heat Olive oil over medium high heat.  Add Garlic, Red pepper flakes, and Parsley.  Cook until Garlic is lightly browned.  Remove from heat.  Drain pasta.  Do not rinse pasta.  add olive oil and garlic mixture and toss. Sprinkle with Parmesan and serve.
    

Simple Fried trout

               This recipe is so simple and you'll only need 7 Ingredients a frying pan and some paper towels. What I like about this dish is how crispy it is on the outside and how moist it is on the inside.  I know you will like this recipe so give it a try


 


Ingredients:
6 sea trout
1Cup all-purpose flour
2Eggs
Old bay
Salt and pepper
Vegetable oil for frying

Directions:
Lightly coat a large frying pan with oil and place on a medium-low flame. In a large bowl beat the eggs. Season fish well with old bay, Salt and pepper. Dip the seasoned Fish in the egg and then coat well in the flour. Place the Fish in the preheated oil and fry until golden brown and crisp, about five minutes per side. Drain on paper towels.

Strawberries In Merlot

      If you love to entertain like I do, you must always have a go-to drink that is low in cost and is good for both men and women. That is why strawberries in Merlot is my go to drink, with only a few ingredients you can make a wonderful, sweet and unforgettable drink for your guest(s).
 Ingredients:
1 cup of Strawberries
1 cup Merlot
7 tbsp granulated sugar
1 tsp dark brown sugar

Directions:
Place wine and granulated Sugar in a large bowl and stir well. Add strawberries. Place in the refrigerator for 30 to 45 Minutes. divide the berries and wine among two wine glasses top each with 1/2 teaspoon brown sugar. Serve immediately.

Cookies!

     I love making cookies with my kids. It's a great way to bond, and also a way for them to show their creativity. What I do is get a lot of cookie cutters, and edible decorations, and let them have fun making a mess. Here are some cookies that I made with my kids and the recipe.

 Ingredients:
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
1 large eggs
2 3/4 cups flour
2 cups butter softened
2 1/2 cup granulated sugar

Directions:

Preheat oven to 375 degrees. In a large bowl mix butter, sugar, egg and vanilla until creamy. In a medium bowl mix flour, baking soda and baking powder. Slowly add the flour to the sugar mixture. Roll out cookie dough into preferred thickness. Cut dough using any cookie cutter you like, place on a cookie sheet and bake for 8 to 13 minutes or until golden, let stand on cookie sheet foe two minutes before moving to cool on a wire rack.
                     Now be creative, have fun and make some memories.

Swiss Burger with Sweet-&-Spicy Sauce

             If you're looking for a burger with a bang, that is juicy and flavorful, but without being fried, then have I got a recipe for you.  I decided to come up with a burger that is baked instead of fried,, because I like my burgers well done, but still wanted a juicy burger. 



Ingredients:
1 1/2 Lbs Ground Beef
1 Cup bread crumbs
1 Large Onion diced
1 cup diced green onions
1/2 cup chopped chives
 2 Shallots diced
1 large bell pepper diced
1 large egg
1/2 cup white button mushrooms diced ( or your choice mushroom)
4 tbsp crushed red pepper
Jalapeno Diced
1/2 cup grated Parmesan Romano
 4 tbsp minced Garlic
Sliced Swiss cheese
Salt and Pepper
Toasted Burger buns

Sauce:
1/2 cup hot sauce
1/2 cup Ketchup
1/4 cup honey

Directions:
           Preheat oven to 350 degrees.  In a food processor, place onions, green onions, bell peppers, mushrooms, chives, shallots, garlic, Jalapeno,  and a pinch of salt and pepper.  Process on high for no more than 30 seconds.  In a large bowl, place ground beef, egg, bread crumbs, Parmesan, crushed red peppers, and processed mixture. Use hands to mix well, but do not over work the meat.  Take meat and form into patties any size you like.  Place patties on non stick baking sheet.  Place in oven for 45 minutes, flip patties after the first 20 minutes.  Meanwhile,in a small bowl, add Ketchup, Honey, and Hot Sauce. Mix well.  After removing patties from oven, place on toasted buns, top with Swiss and Sauce, and add lettuce and tomato to your liking..

         
              Within minutes of serving these baked burgers, They disappeared.

Bruschetta

               Today I would like to share with you my recipe for Bruschetta. 


Ingredients:
1 Baguette
1 large onion
1 green bell pepper
10 sliced white button mushrooms
Lb steamed and peeled Large shrimp
olive oil
 roasted garlic

Directions:
                Preheat oven to 350 degrees.  Slice Baguette diagonally into 1/2 inch slices.  Brush each side with 2 to 3 tbsp olive oil.  Place on baking sheet, and bake for 8 to 10 minutes.  In a frying pan, add 2 tbsp olive oil, over medium flame, add in onions, bell peppers, and mushrooms, and saute until onions are translucent.  After you remove the slices from the oven, spread the roasted garlic on each slice.  Top with the sauteed vegetables. Finally, top with one shrimp per slice.

Spicy Honey- Mustard Fish

      My spicy honey mustard fish is big hit with the men in my family, they love heat from the red pepper flakes and jalapenos. If you're looking for something with a kick, give this a try.  




Ingredients:
Soul Seasoning
Old Bay
2 Eggs
Salt and pepper1Cup all-purpose flour
1/4 cup of Honey
3 Tablespoons of Red pepper flakes plus some for seasoning
1  Diced Jalapeno
1/4 Mustard of your choice
Vegetable oil for frying
6  trouts or fish of your choice
Juice from half of lemon


Directions:
Lightly coat a large frying pan with oil and place on a medium-low flame.  In a large bowl beat the eggs. Season fish well with old bay, Soul Seasoning, pepper flakes,  Salt and pepper. Dip the seasoned Fish in the egg and then coat well in the flour. Place the Fish in the preheated oil and fry until golden brown and crisp, about five minutes per side. Drain on paper towels.  In a small bowl Place  honey, Lemon Juice, mustard,  3 tablespoons of red pepper flake and diced Jalapeno mix well and pour over fish.

Hello

     Hello I am so sorry that I have not been blogging lately, I got some emails asking me why I had stop posting.  Well I have been so busy working on my cookbook and coming up with new recipes. Don't worry I will be posting a new recipe soon, and also I am thinking about starting a Youtube channel so look out for that one. Well until then Eat And Feed your soul!
