Spaghetti Aglio e Olio

            Today I would like to share with you this Italian favorite, Spaghetti Aglio e Olio.  It was a big hit with my family.

1 Lb Spaghetti noodles
1/2 cup Extra Virgin Olive Oil
6 cloves Garlic Thinly sliced
2 Tbsp Crushed red pepper
1/2 cup fresh Parsley chopped
1 cup Shredded Parmesan cheese

            Cook Pasta in Boiling water until al dente.  While pasta is boiling, heat Olive oil over medium high heat.  Add Garlic, Red pepper flakes, and Parsley.  Cook until Garlic is lightly browned.  Remove from heat.  Drain pasta.  Do not rinse pasta.  add olive oil and garlic mixture and toss. Sprinkle with Parmesan and serve.

  2. I've made an almost identical recipe for years. Try adding a ladle of the pasta water to the oil tossing and letting reduce by half prior to adding the Parmesan. Sometimes I'll add a raw egg at the end, some bacon, pancetta, etc. It's a great quick meal.
