Vegetarian Chili

Hey, I know its been a long time since I've posted a recipe... but, I have been super busy. My husband Eric and I have been on a health kick lately and we try to have at least, two or three vegetarian meals a week, but my husband is the type of guy who loves his burgers and meaty chili's, so that means I have to be creative and come up with vegetarian meals that he'll never know the meat is missing. So that being said I'll like to share my vegetarian chili recipe with you.

1 large onion, diced
2 stalks celery, diced
4 Tablespoons of minced garlic
1 red, green orange, and yellow bell peppers, diced
4 tablespoons chili powder
2 cups of sliced mushrooms
1/2 teaspoon red pepper flakes
1 29 oz can crushed tomatoes
1 29 0z can of whole tomatoes
2 15 oz cans of red kidney, rinsed and drained
2 15 oz cans of black beans, rinsed and drained

4 Tablespoons ground cumin
1 Tablespoons garlic powder
  shredded cheese (optional)

Directions:

combine all Ingredients into a large dutch oven, large pot, or slow cooker.
Dutch Oven/ pot: Simmer for 3-4 hours on low, stirring every so often.  Slow Cooker: Simmer for 6-7 hours on high.
